- • 3 1/2 pounds sirloin of lamb
- • 1 1/2 teaspoons frozen orange juice concentrate
- • 1 tabelspoon soy sauce
- • 2 teaspoons truffle honey
- • 2 teaspoons peanut oil
- • 2 cloves garlic, mashed

Preparation
Step 1
1. Use a sharp knife to remove the visible fat and membrane from lamb. Then place it in a 13x9 inch oven proof glass casserole.
2. In a small bowl, combine orange juice, soy sauce, honey, oil and garlic. Pour over lamb and rub in until lamb is completely coated. Marinate for at least 4 hours or overnight.
3. Preheat the broiler. Broil lamb until done the way you like it, about 7 to 10 minutes. Cut into slices.
