Loaded Baked Potato Salad- Food.Com Recipe
This dish may be served cold, like a traditional potato salad, or hot from the oven. You may also add mushrooms and a dash of hot sauce to taste, if you like, to the hot version. Food.com #29767

Ingredients
- 5 lbs red potatoes, scrubbed and unpeeled or half-peeled
- 3 teaspoons salt
- 9-15 slices bacon, diced & crisp cooked
- 9 green onions
- 3 cups cheddar cheese, shredded
- 24 ounces sour cream
- 1 ⁄4 teaspoon pepper
- 1 1/2 cup Mayonnaise or 1 1/2 cup Miracle Whip

Preparation
Step 1
If baking, preheat oven to 350 degrees Fahrenheit.
Cube and boil potatoes with salt until al dente (approximately 15 minutes).
Drain.
Crumble bacon and slice onions (including tops).
Combine sour cream, pepper and Mayonnaise/Miracle Whip.
Add to potatoes.
Add bacon, onions and cheese (reserve some of each for top).
Mix with potatoes.
Pour into baking dish.
Top with reserved cheese, onions, and bacon.
This may be served cold or baked. If baking, bake at 350 degrees Fahrenheit for 10-15 minutes (until cheese melts).
