Preparation
Step 1
BROWNIES:
Preheat oven to 350 degrees F. Prepare a 9x9 inch baking dish by lining with foil, leaving some overhang on the edges. Spray with nonstick cooking spray. Set aside.
In a small saucepan on the stovetop, over low heat, melt Butter and chopped Chocolate, stirring frequently.
Once melted, remove immediately from heat and transfer to a large mixing bowl to cool slightly.
Whisk Granulated Sugar and Brown Sugar into the chocolate mixture until all sugar lumps have dissolved.
Add Eggs and Vanilla Extract; whisk very well until combined.
Stir in Flour and Salt, using a large spoon or rubber spatula, until just combined. Do not overmix.
Spread batter evenly into prepared baking dish. Bake for 37-41 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached (not wet batter).
Set the pan on a wire rack, and allow brownies to cool completely before frosting, about 1 hour.
FROSTING:
In a large bowl, beat Cream Cheese, using an electric mixer until very smooth, about 1 minute.
Add Cocoa Powder, Powdered Sugar, Vanilla Extract, and Salt; Beat well for about 2-3 minutes, starting at low speed and gradually increasing the speed to high.
Frost cooled brownies; top with sprinkles, if desired.
Makes about 16.
