Ingredients
- 2 Tablespoons cooking oil (I used light EVOO.)
- 3 1/2 Tablespoons milk of choice
- 1/8 teaspoon vanilla extract
- 1/4 cup Carla's Gluten-Free All-Purpose Flour recipe (I used cornstarch, versus tapioca)
- 1/4 cup natural sweetener (xylitol-birch derived, SustaBowl, or stevia equivalent)
- 2 Tablespoons gluten-free unsweetened cocoa powder (or Rochelle Dutch processed cocoa)
- Small pinch fine sea salt

Preparation
Step 1
In a 10 oz. or larger coffee mug (I used 12 oz.); add the vegetable oil and run it around mug to oil most of the sides; add milk and vanilla; whisk until slightly combined. In a separate cup or bowl, add flour, sugar, cocoa, and whisk until well combined; add to the wet ingredients; mix well until lumps dissolve; bake in microwave on high for 80 seconds; cook for additional 10 second intervals if needed, as microwaves vary. Serve warm or cooled.
Tips Variations: Use a 12 oz. mug and your favorite chocolate chips. Add frosting or ganache to the top. Add 1 Tablespoon nut butter to the center top before baking....
