Step 1


Take equal amounts of raw cashew pieces and water (e.g. 1 cup of each). Pre-soak the cashew pieces in the water (the longer you soak them the "creamier" the result).
Then whiz in a blender or food processor until it resembles thick heavy cream (The longer you process it, the smoother it gets).
Substitute this "cashew cream" for heavy cream in any ice-cream recipe.

If the recipe calls for sugar, use half the amount of honey instead (e.g. 1 cup sugar = 1/2 cup honey), or let your taste be your sweetening guide.
Try adding vanilla, pureed fruits, chopped nuts, etc. to make whatever flavour ice cream you like.
