  • 1 egg
  • 2 T water
  • 1 lb ground turkey
  • 1 1/4 dried breadcrumbs
  • 1/3 cup parmesan cheese
  • 2 T fresh finely chopped parsley
  • 2 mined cloves garlic
  • 1 Tsp kosher salt, fresh ground black pepper
  • 8 cups low sodium chicken stock
  • 2 carrots diced 1/4 "
  • 1 cup penne pasta
  • 5 cups white swiss chard, or escarole leaves, not stems, coarsly chopped
  • 1 cup shredded mozzarella
  • Fresh shredded parmesan cheese

Preparation

Step 1

Make the meatballs 1 1/4 " size, chill. Large pot bring stock to boil, reduce heat add carrotts and balls, uncovered 8 mins. Add pasta, cook 3 mins. Stir in greens and simmer 3-5 mins more. Divide mozzerella into 6 bowls and ladle soup into them. Garnish with fresh shredded parmesan
