Ingredients
- 1 egg
- 2 T water
- 1 lb ground turkey
- 1 1/4 dried breadcrumbs
- 1/3 cup parmesan cheese
- 2 T fresh finely chopped parsley
- 2 mined cloves garlic
- 1 Tsp kosher salt, fresh ground black pepper
- 8 cups low sodium chicken stock
- 2 carrots diced 1/4 "
- 1 cup penne pasta
- 5 cups white swiss chard, or escarole leaves, not stems, coarsly chopped
- 1 cup shredded mozzarella
- Fresh shredded parmesan cheese

Preparation
Step 1
Make the meatballs 1 1/4 " size, chill. Large pot bring stock to boil, reduce heat add carrotts and balls, uncovered 8 mins. Add pasta, cook 3 mins. Stir in greens and simmer 3-5 mins more. Divide mozzerella into 6 bowls and ladle soup into them. Garnish with fresh shredded parmesan
