Ingredients

  • 4 SERVINGS
  • • 10 Guinea Hen Legs or Guinea Hen Breast
  • • 2 cups olive oil
  • • 1 lemon sliced, 1/4 inch
  • • 1 orange sliced, 1/4 inch
  • • 2 sprigs fresh rosemary, chopped
  • • 6 cloves garlic, thinly sliced
  • • 2 sprigs fresh thyme, chopped

Preparation

Step 1

1. Marinate the guinea hen legs with all of the ingredients listed above for 2 to 3 hours.

2. Heat the grill (gas or charcoal)

3. Remove excess oil from the bird

4. Grill each side until nice and brown. Reduce or move to a low heat to finish the cooking. Lay a few slices of the oranges and lemon on the grill for extra aroma and flavor. During the cooking brush with marinade and add some of the slice on each leg for extra flavor. The legs should take about 30 minutes on the grill.

5. If grilling vegetables, toss vegetables in the marinade before grilling.
