TOMATOES*****Cherry Tomato Gratin

I always enjoy this - either as a side dish or a simple lunch (or even dinner) which somehow manages to feel indulgent to me.

Ingredients
- 12 - 16 cherry tomatoes, depending on size (mixed colours are nice)
- fresh herbs of choice - basil, thyme, etc.
- 1 tablespoon olive oil
- drizzle of balsamic vinegar (Optional)
- pinch of red pepper flakes
- freshly ground pepper and Maldon salt to taste
- 1/4 cup panko
- 1 tablespoon freshly grated parmigiano reggiano or pecorino romano
- minced or grated garlic (Optional)

Preparation
Step 1
Preheat Breville oven to 400.
Toss together tomatoes, herbs, balsamic, if using, and seasonings with 1 teaspoon of olive oil and spoon into individual gratin dish.
Separately combine panko with cheese and optional garlic and spread evenly over tomatoes.
Bake for 25-30 minutes until bubbly and golden brown, covering lightly with foil near the end if the crumbs are getting too brown.
Remove from oven and let rest for 5-10 minutes (it's hot, hot, hot) then serve.
