  • 1 1/2 c finely grated parmesan cheese
  • 1 c finely grated sharp cheddar cheese
  • 1/2 tsp salt
  • 1/4-1/2 tsp cayenne pepper
  • flour for dusting work surface
  • 1 lb frozen puff pastry, defrosted
  • 1 egg, beaten

Preparation

Step 1

mix the cheeses, salt, and cayenne pepper together in a small bowl.

dust the work surface with flour. if the pastry dough is packed in two 1/2lb sheets, roll one sheet of pastry or 8 oz pastry to a 10 x 18 rectangle. brush the entire surface of the dough with the beaten egg and sprinkle 1 c of the cheese mixture over the top half of the dough. fold the bottom half of the dough over the cheese, and press the edges with the rolling pin to seal, then press the dough gently in a few places to make the layers stick together. roll the dough into a 10 x 18 rectangle. sprinkle 1/4 c of the cheese mixture over the top of the dough, and with a rolling pin press the cheese into the dough.

using a pizza wheel, trim the edges of the dough and cut it into 3/4" wide strips. twist the strips loosely 4 or 5 times from the center out, and place them on a parchment lined cookie sheet. repeat with remaining dough. place the cookie sheets in the refrigerator to allow the pastry dough to rest for 30 min.

preheat the oven to 400.

bake the cheese straws for 12-15 min. until golden. remove them from the oven and cool on a wire rack. serve at room temp.
