  • 1 1/3 cups milk
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 3 beaten egg yolks
  • 1 tablespoon vanilla
  • 1 cup whipping cream
  • 1 cup cream
  • 1 Vanilla Bean (optional)

Preparation

Step 1

Scald milk over low heat, but do not boil. Stir in sugar and salt. Pour the milk mixture slowly over beaten egg yolks, whisking constantly. Beat these ingredients until well blended. Stir and cook in a double boiler over but not in-hot water, until thick and smooth. Chill. Add and fold into the custard, the vanilla, whipping cream, and cream. Churn in icecream maker.
