Ingredients
- 2 tsp ground coriander
- 1 1/2 tsp garam masala ( pensky's brand)
- 1/2 tsp cumin
- 2 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- 1 lb chicken breast
- 1 medium onion, peeled and chopped
- 4 cloves garlic,peeled and minced
- 2 " piece ginger, peeled and minced
- 3/4 cup Fat free chicken stock
- 5 Cardamom
- 1 cinnamon stick
- 2 bay leaves
- 1 tsp coconut oil
- 1/2 cup 2% greek yogurt

Preparation
Step 1
In a small bowl, mix the ground coriander,
garam masala, cumin, paprika, salt and pepper. Set aside.
IN a non stick skillet, add 1 tsp coconut oil till warmed. Add the onions, garlic, and the ginger. Saute till tender. Might have to cover and add a little water to stem so they don't burn.
Next add the bowl of spices and stir till fragrant. Then add the chicken stock, cardamom, cinnamon, and bay leaf. Stir and let this cook for 15 minutes covered over low heat.
While that is cooking, heat a grill pan on the stove over medium high heat, spray with cooking spray.
Grill the chicken on both side to till grill marks only but not cooked through. Then cut the chicken into small pieces.
After the 15 mins of broth cooking, add the chicken and the yogurt and cook for 5 minutes on low.
Remove the cinnamon stick, bay leaves and the 5 cardamon pods.
Serve over cauliflower rice. ( pulse 3/4 a head of cauliflower in the food processor till rice looking. Pour it into a microwave safe bowl with a lid. DON"T add water. cooking for 3 minutes or till tender but not mushy)
