Ingredients
- 4 Rock Cornish game hens
- 4 T dark rum
- 1/4 cup lime juice
- 4 T honey
- 4 cloves garlic, minced
- 2 tsp salt, divided
- 1 tsp coriander
- 1 tsp pepper

Preparation
Step 1
Preheat oven to 350 degrees
Wash hens and pat dry. Mix together rum, lime juice, honey, garlic and 1 tsp salt. Rub mixture all over hens and marinate in refrigerator for at least 30 minutes.
Transfer hens from marinade to a shallow baking dish and pour marinade over hens. Sprinkle skin of hens with salt, pepper and coriander. Roast hens for about 35-40 minutes or until done, basting frequently with pan juices.
