Ingredients

  • 1 1/2 cups fat free milk
  • 2 1/2 Tbsp all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup (4 oz) reduced fat shredded sharp cheddar cheese
  • 1/3 cup 1/3 less fat cream cheese
  • 3 cups chopped cooked chicken breast
  • 1 cup light mayo
  • 3/4 cup chopped onion
  • 1 (8 oz) can diced water chestnuts, drained
  • 1 (10 oz) pkg frozen chopped broccoli, thawed and drained
  • 1 3/4 cups cooked rice
  • Cooking spray
  • 35 reduced fat Ritz Crackers, crushed

Preparation

Step 1

1. Preheat oven to 375 degrees.

2. Combine milk and next 3 ingredients in large saucepan over med-high heat, stirring with a whisk; bring to a boil. Cook 1 min or until thick, stirring constantly. Remove from heat and add cheeses, stirring until smooth. Combine cheese sauce with chicken and next 5 ingredients in a large bowl. Spoon chicken mixture into a 13x9" baking dish coated with cooking spray.

3. Sprinkle crushed crackers on top of chicken mixture; spray crackers with cooking spray. Bake at 375 degrees for 30-40 min or until casserole is bubbly and crackers are golden brown. Let stand 10 min. before serving.
