- 6 large eggs
- 1 medium red onion chopped
- 1 clove garlic crushed
- 2 tsp dried parsley
- 2 cups chopped broccoli
- salt and pepper to taste
- 1 tsp. virgin olive oil
- 3 TBS. parmesan cheese

Preparation
Step 1
preheat oven to 350*
heat olive oil in a wide nonstick frying pan over medium heat. add onion, cook stirring often until onion begins to soften. stir in garlic, parsley, and broccoli. continue cooking until broccoli is bright green, season with salt and pepper. beat eggs in a large bowl stir in broccoli mixture. grease a shallow 2 qt. baking dish. pour eggs mixture into dish. sprinkle with parmesan cheese. bake uncovered for 25 to 30 minutes. until frittata is firm in center when touched.
