Ingredients
- Ingredients:
- Toss in plastic bag until well coated: 1 cup sugar cubes and 1 Tbsp. ground cinnamon
- 6 cups flour
- 1/3 cup non fat dry milk
- 1 pkg. dry yeast
- 2 teasp. salt
- 2 cups hot water
- 3 Tbsp. shortening
- Crack sugar cubes with hammer and break into halves or quarters or...buy 1/2 teasp. sugar cubes
- 2 med loaf pans (81/2 x 41/2) lined with parchment or wax paper

Step 1
Mix together:
2 cups flour
dry yeast
dry milk
salt
Pour in water and add shortening
Beat 2 min. or 150 strokes with wooden spoon
Stir in balance of flour 1/2 cup at a time until dough is a rough mass.
The sugar cubes are added gradually during the kneading process.
Pre heat oven to 400 degrees for 20 mins.
1. Turn out onto lightly floured surface and knead for 2 mins.
2. Flatten dough and add 1/4 cup sugar cubes. Fold dough over cubes and
continue kneading.
3. When cubes arfe incorporated, add 1/4 more again work into dough,
kneading. Continue until all cubes are added, then knead 8 more mins.
If surface becomes sticky, add more flour.
4. Place dough in a greaded bowl. Turn to coat completely. Cover with
plastic wrap and move to a warm place. (80-100 degrees). Let rise
until doubled in size. (45min. -1hr.)
5. Turn onto surface and divide in half. Moist pockets of sugar will be
exposed. Carefully close and pinch dough seams.
6. Shape into 2 balls-let stand 3-4 mins.
7. Form a loaf by pressing into an oval the length of the pan. Fold
oval over and pinch seams together, then tuck ends under.
8. Place pans in warm place, cover with parchment or waxed paper. Leave
until center has resen 1/2 inches above edge of pan. (45 min.)
9. Place loaves in hot oven 15 mins. Then reduce to 350 degrees for 40
mins. Shift tins halfway through baking.
