These fabulous German Chocolate Brownies are packed with rich, chocolaty flavor. Instead of making a traditional German Chocolate Coconut Frosting to go on top, I mixed a sweetened coconut mixture through the brownie batter, and baked the two together. This made the brownies super moist and delicious. I have made them twice in the past couple of weeks (help me Rhonda, seriously) and they were well received by the boy scouts and neighbors I shared them with. A person such as myself cannot be trusted with a pan of these hanging out in her kitchen, truly. They are the sort of dessert you need to make, taste and then get them far, far away.

Ingredients

  • BROWNIE LAYER:
  • 1 C butter, softened
  • 2 C sugar
  • 1 tsp vanilla
  • 4 eggs
  • 8 Tb cocoa
  • 1 1/2 C flour
  • dash salt
  • COCONUT LAYER:
  • 1/2 C butter
  • 1 C coconut
  • 1/4 C chopped pecans
  • 1 tsp vanilla
  • 2 Tb milk
  • 6 Tb brown sugar
  • dash salt

Step 1

1. Preheat your oven to 350 degrees.
2. Into your stand mixer, or large mixing bowl place 1 C softened butter. Add 2 C sugar and cream the two together until nice and fluffy. Should only take a minute or two.
3. Add 4 eggs and beat for an additional minute. Add 1 tsp vanilla and mix just until combined.
4. Into a medium sized mixing bowl place 8 Tb cocoa powder, 1 1/2 C flour and a dash of salt. Toss them together with a fork to combine.
5. Add the dry ingredients into the butter mixture.
6. Beat for 1-2 minutes or until nice and smooth.
7. Spray a 9x13 pan with cooking spray and spread the mixture out evenly over it.
8. Into a small mixing bowl place 1/2 C butter. Pop it into the microwave and melt the butter.
9. Add 1 C coconut, 1/4 C chopped pecans, 1 tsp vanilla, 2 Tb milk and 6 Tb brown sugar. Stir well to combine.
10. Spoon the coconut mixture onto the top of the brownie batter. Drag a butter knife through the two layers so they become blended, somewhat. You don't want to totally incorporate the two. Just mix them up in a marbly kind of way.
11. Pop the pan in the oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
12. Cool completely and cut into bars.

Yield: 1 (9x13) pan, cut as large or as small as you like
