Ingredients
- Truffles:
- 24 ounces chocolate chips
- 8 ounces cream cheese, softened
- 3 tablespoons instant espresso granules
- 2 teaspoons water
- Optional Coatings:
- dark chocolate confectionery coating
- cocoa powder
- toasted coconut
- nuts
- crushed peppermint candies
- coconut spice (1/3 cup toasted finely shredded coconut, 1/4 teaspoon cinnamon, 2 tablespoons sugar, 1/4 teaspoon cardamom, pinch of cloves)
- chile spice (1 teaspoon allspice, 1 teaspoon chipotle powder, 1 teaspoon ancho powder, 1/3 cup sugar, 1 tablespoon cinnamon)
- cocoa five-spice (1/4 cup cocoa, 1/2 teaspoon five-spice powder, 1/3 cup sugar)

Preparation
Step 1
Melt chocolate chips. Add cream cheese, espresso granules, and water. Mix thoroughly. Chill until firm enough to shape. Scoop up level tablespoons of the chocolate and roll into a ball. Roll one truffle at a time into one of the coatings. Refrigerate until chilled.
