  • 2 egg yolks
  • 6 tablespoons sugar
  • 1 teaspoon vanilla
  • 1/2 cup water
  • 1 cup espresso
  • 2 tablespoons coffee liqueur
  • 1 package lady fingers

Step 1

In a small saucepan, bring the water, sugar, and vanilla to a boil. Allow the sugar to dissolve completely, then turn off the heat.

In a small mixing bowl, beat the egg yolks until pale in color, about 4 minutes. Combine the warm sugar mixture with the eggs. Be careful that the sugar mixture is not too hot or too cold - you want to cook the eggs without scrambling them!

After the sugar and egg mixture has cooled completely, add the mascarpone cheese. Mix thoroughly and refrigerate until ready to use.

In a wide shallow bowl, combine the espresso and the liqueur. Divide the package of ladyfingers in half. One by one, quickly dip half of the package of ladyfingers into the coffee mixture and place in a 8 x 10 inch pan in a single layer. Be careful not to let the ladyfingers soak up too much or too little coffee or the dessert will become to soggy or dry. Spread half of the mascarpone cheese mixture over the ladyfingers. Sprinkle with cocoa powder. Repeat with another layer of soaked ladyfingers, mascarpone cheese, and cocoa. Refrigerate before serving.
