Ingredients

  • 1 . Defrost chicken (3 minute for 3 frozen chicken breasts)
  • 2 . Chop up veggies (1/2 a large red onion, romaine lettuce, one bell pepper, one package of enoki mushrooms; these are the white stringy mushrooms), toss in large salad bowl.
  • 3 . Slice up defrosted chicken and cook in a pan with olive oil, salt and pepper
  • 4 . Chop up asparagus and place in sauce pan filled with water and cook till tender/crisp. Drain and toss in salad bowl.
  • 5 . Take cooked chicken and toss into salad bowl.
  • 6 . Make salad dressing: 2 Limes, roughly 5 tbs. of extra virgin olive oil, salt, pepper, chopped up cilantro, and 4 cloves of garlic (minced and chopped). Combine and mix together. Add into salad bowl.
  • 7 . Take pre cooked black beans (this I did the night before, takes roughly 1-2 hours to cook raw black beans) and add to salad bowl.
  • **You can use canned black beans too, I didn't because I didn't realize you could wash away most of the sodium off when they're in canned form.
  • 8 . Mix all together, and place in fridge. This makes roughly 6 meals.
