Perfect Divinity

This divinity recipe is perfect. Make sure to beat the final mixture until it has a dull finish, so that it will thicken up nicely into candy when it is cooled and dry.

Ingredients

  • 3 cups sugar
  • 1/2 cup light Karo syrup
  • 2/3 cup cold water
  • 2 egg whites
  • Pinch of salt
  • 1 teaspoon vanilla
  • 1 cup walnuts, finely chopped

Preparation

Step 1

In a medium size saucepan, cook the first 3 items to hard ball stage (250°F).

Beat 2 egg whites in small bowl with pinch of salt until stiff.

Put eggs in large bowl. Pour syrup mixture in a very fine stream in front of the beaters. Add vanilla and nuts. Beat until dull finish. Spoon onto wax paper.
