Banana Nut Cake

Ingredients
- Cake:
- 2 1/3 C. Flour (2 1/2 C. Cake Flour)
- 1 1/4 tsp. Baking Powder
- 1 1/4 tsp. Baking Soda
- 1 tsp. Salt
- 1 2/3 C. Sugar
- 2/3 C. Shortening (Crisco)
- 3 Eggs
- 1 1/4 C. mashed Bananas (about 3 medium)
- 2/3 C. Buttermilk
- 2/3 C. Finely chopped nuts
- Frosting:
- 1 (3 oz.) pkg. cream cheese - soft
- 6 Tblsp. unsalted butter (soft)
- 3 C. Confectioners suger (unsifted)
- 1 tsp. Vanilla
- 1 Tblsp. Half and Half

Step 1
Heat oven to 350.
Grease and flour 13 X 9 pan (or two 9", or three 8" round layer pans)
Combine flour, Baking Powder and Baking Soda, and salt in a small bowl and set aside.
Beat shortening and sugar til combined. Add eggs, beat until smooth. Add flour mixture, and mix just until combined. Add buttermilk and banana's alternately, then add nuts. (I used toasted pecans).
Pour into prepared pan(s). Bake until toothpick inserted in center comes out clean. 13X9 - 45-60 Minutes, layers 35-40 minutes; cool.
