Ingredients

  • 2 c flour
  • 2 t baking soda
  • 1/2 t salt
  • 2 ts ground cinnamon
  • 1/2 c butter, softened
  • 1/2 c vegetable oil
  • 1 1/2 c sugar
  • 3 eggs
  • 1 t vanilla extract
  • 3 c peeled, seeded and chopped mango
  • 1/2 cup raisins
  • 1/2 cup shredded coconut

Preparation

Step 1

Spray mini muffin tin with cooking spray.

In a large bowl, combine the flour, baking soda, salt, and cinnamon.

In a separate large bowl, mix the butter, oil and sugar until fluffy.

Stir in eggs one at a time.

Stir in vanilla.

Combine wet mixture with the flour mixture.

Scoop into greased mini muffing pans.

Preheat oven to 350 degrees F (175 degrees C).

Bake in preheated oven for approximately 10 minutes.
