Ingredients
- 2 lb top round roast
- 1 big onion, diced
- 1/2 lb sliced mushrooms
- 2 tbs olive oil
- 1 carrot, peeled
- 4 potatoes, peeled and cubed

Step 1
Cut meat into 1 inch squares, rinse, cover with water half way and bring to boil. Add onions and mushrooms, reduce heat, simmer for an hour. Once liquid cooks away, add oil, carrots, salt, pepper. Simmer for 20 min. Add 1 cup of water and potatoes. Cook until potatoes are done, about 40 min.
