06/07/15 - I liked this. It would make a nice addition to a cold-cut spread or a simple lunch. I doubt Dan would care for it as it's pretty spicy. I had it the first time as an accompaniment to cream cheese smoked salmon toasts

CUCUMBER****Quick Pickled Cucumber 1 Picture

Ingredients

  • 1/2 pound pickling cucumbers, halved lengthwise and thinly sliced (5 baby cucs)
  • 1 teaspoon kosher salt
  • 1 tablespoon sesame oil
  • 2 tablespoons thinly sliced onion
  • 1/2 tablespoon chopped basil (didn't try the first time but if you have it, go ahead)
  • 3/4 teaspoon red pepper flakes
  • 1 clove garlic, minced
  • 1/2 teaspoon finely chopped ginger
  • grated zest and juice of one large lime
  • 1/4 teaspoon fish sauce

Preparation

Step 1

Toss the cucumber with the salt in a colander and let drain for about 20-30 minutes. Add them to a bowl along with all the other pickle ingredients, stir to combine and let the mixture stand at room temperature for about 2 hours (stir every once in a while). Transfer to a container and refrigerate.
