Bacon-Wrapped Chicken Meatballs

Ingredients
- 16 pieces thinly sliced bacon
- 1-1/4 lbs ground chicken
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1/2 cup onion, finely chopped
- 2 small garlic cloves, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 2 Tbsp flat-leaf parsley, finely chopped
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp Worcestershire sauce
- 1 large egg

Preheat the oven to 350°F. Place the bacon slices onto a baking sheet and bake until almost cooked. (It shouldn't be crispy.) Remove the bacon from the pan and place onto paper towels to drain. Set aside.
Fit a stand mixer with a paddle attachment and place the remaining ingredients in the mixer bowl. Mix on low speed until the ingredients are completely incorporated.
Use an ice cream scoop to make a round, uniform meatball (about 1" in diameter). Wrap a piece of bacon around the meatball, secure it with a wooden toothpick, and place the meatball on a baking sheet. Repeat. Bake for 10 minutes. Rotate the baking pan and bake for another 10 minutes, or until the meat is no longer pink and the bacon is crisp.
