Peanut Butter Cupcakes with Banana Buttercream Frosting 1 Picture

Ingredients

  • Cupcakes:
  • 1/2 cup butter
  • 1 cup peanut butter
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3.5 cups all purpose flour
  • 1.75 tsp baking powder
  • 1/2 cup white milk
  • Frosting:
  • 1 banana
  • 1/2 cup butter (room temperature)
  • 1/2 tsp vanilla
  • 1/4 tsp vinegar
  • 1/4 tsp salt
  • 3 cups powdered sugar

Preparation

Step 1

For the cupcakes:
Preheat oven to 350 degrees.
Cream butter, peanut butter and sugar.
Beat in eggs one at a time.
Turn blender to stir and add in vanilla.
Sift flour and baking powder, gradually add into mixture.
Add milk and blend on low only until well mixed, do not over mix.
Bake for 20 mins or until cupcakes are fully cooked in the middle.

For the frosting:
Remove any dark spots and put banana in mixer on low, blend until all lumps are removed.
Cream butter, vanilla and banana.
Stir in vinegar and salt.
Gradually add in powdered sugar.
Because of the banana, this frosting is best used the day it is made. Once cupcakes are cool, frost and serve.
