Ingredients
- 3/4 pound boneless skinless chicken or turkey breast, cut into 1-inch cubes
- 1 pound baking potatoes, peeled and cut into 3/4-inch cubes
- 2 pounds ripe tomatoes, peeled and cut into 3/4-inch thick slices
- 6 Tbsp. extra virgin olive oil
- 2 Tbsp. dried oregano
- Salt and freshly ground black pepper
- Freshly grated Parmesan cheese for sprinkling

Step 1
Preheat the oven to 400 degrees F.
Place the chicken, potatoes, tomatoes, olive oil and oregano in a 12 x 9 x 2-inch baking casserole. Season with salt and pepper, and toss a few times to mix well. Bake until the chicken is cooked through and the potatoes are tender, about 45 minutes. Remove and serve hot with the Parmesan cheese.
