Ingredients
- 1 cup brown sugar
- 4 oz egg whites (approx. 4 large egg whites)
- 1 1/2 cups butter
- 1-2 tsp vanilla

Step 1
Whisk brown sugar and egg whites together in stainless steel bowl. Set on a hot bath on your stove. Continue whisking until it is no longer grainy to touch about 145 degrees. Remove from heat and put on your mixer with whisk for approx 10-15 mins. till it reaches a meringue like consistency. Switch your whisk with your paddle or beaters and add in your butter a little at time then add in your vanilla. Mixture may look ‘curdled’ a few mins into mixing but keep going till you get a smooth silky texture.
