Ingredients

  • 1 lb pasta. Good choices are fiori (flowers), rotelle (wheels), farfalle (bow ties), fusilli (corkscrews), penne, or small shells
  • 2 1/2 cups arugula
  • 1/2 lb cherry tomatoes, washed, dried and sliced in quarters
  • 1 English cucumber, washed, dried, and chopped
  • 1/2 medium red onion, diced
  • 2 scallions, chopped
  • 6-8 slices of bacon, fried and crumbled
  • 3 tablespoon goat cheese, crumbled
  • Italian or ranch dressing to taste

Preparation

Step 1

Cook pasta in a gallon of boiling water with 1 tablespoon of salt and 1 tablespoon of oil for 6 minutes.

Drain and rinse the pasta in cold water. Dump onto a large baking sheet to cool and dry.

Add pasta to a large bowl. Mix in onion and scallion.

Lightly mix in cucumbers, tomatoes, arugula and the desired amount of dressing.

Add bacon and goat cheese on top, and mix just before serving.
