Fruity Oat Biscuits

Ingredients
- 1 cup wholemeal self raising flour
- 1 cup rolled oats
- 1 cup caster sugar
- 140 g tub two fruits, drained
- 1/2 cup sultanas
- 125 g butter
- 2 tablespoons honey
- 1/2 teaspoon bicarbonate of soda
- 1 tablespoon boiling water

Preparation
Step 1
Preheat oven to 180/160 fan fan forced. Line a large cookie tray with baking paper.
Sift flour into a large bowl. Stir in oats, sugar, two fruits and sultanas.
Place butter and honey in a saucepan over medium low heat. Cook, stirring, for 5 to 6 minutes or until melted. Remove from heat.
Combine bicard soda and boiling water in a bowl. Stir into butter mixture (mixture will become frothy). Add to flour mixture. Stir to combine.
Roll level tablespoons of mixture into balls. Place balls 6cm apart on tray. Flatten slightly.
Bake for 10 to 12 minutes or until golden.
Cool completely on trays, then serve.
