Ingredients

  • 1 medium zucchini, grated
  • 1 small carrot, grated
  • 1 medium red capsicum, finely grated
  • 100 g ham, chopped
  • 3/4 cup grated tasty cheese
  • 1/2 cup self raising flour
  • 1/4 cup vegetable oil
  • 4 eggs, beaten
  • 6 cherry tomatoes

Preparation

Step 1

Preheat oven to 180 degrees. Grease a 3.5cm deep, 16 x 26cm base slice pan. Line with baking paper.

Combine zucchini, carrot, capsicum, ham cheese and flour in a bowl.

Whish oil and eggs together in a jug. Add egg mixture to vegetable mixture and combine.

Pour mixture into pan and smooth surface top. Gently pres tomatoes evenly spaced on top of slice.

Bake for 30 mins or until skewer comes out clean. Cool in pan for 5 minutes.

Cool and cut to serve.
