ANGEL ICING

This is Connie's maternal grandmother's (Mamaw Moore - Lillie Toy Moore) recipe, and Connie's favorite icing. Mamaw Moore would always use this icing on my birthday cake, and she would always sprinkle coconut on it too. Light, airy, not overly sweet, but mmm-mmm GOOD!!!

Ingredients
- 2 egg whites (room temperature)
- 2 cups sugar
- 2 TBS. light Karo syrup
- 1/2 cup water
- 2 TBS. vanilla

Preparation
Step 1
Beat egg whites in mixer. Set aside. Boil sugar, corn syrup and water to hard ball stage or until forms a thread when poured from spoon.
Pour slowly into egg whites and beat. Continue beating until mixture holds peak. Add vanilla and mix. If icing starts to cream, add tiny bit of warm water.
