Corn and Zucchini Salad

Ingredients

  • 3 earn corn or 2 cups corn kernels
  • 2 medium zucchini
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 2 tbsp cilantro, chopped
  • salt and pepper

Preparation

Step 1

Cut kernels off corn cobs, or put kernels in a bowl. Slice zucchini thinly, add to corn. Add lime juice, olive oil, cilantro, and season with salt and pepper. Toss well to combine.
