Ingredients
- • turkey juices, from pan
- • 1/3 cup all-purpose flour
- • 2 cups turkey stock, warmed
- • 1/2 cup milk
- • 1/2 cup heavy cream
- • kosher salt and freshly ground black pepper

Step 1
1. Pour juices from roasting pan into a fat separator
and allow to stand for 10 minutes. Place roasting pan
across 2 burners over medium heat. Add turkey juices
(reserving fat). Bring to a boil and cook, scraping up
any browned bits. Add flour and 1/4 cup reserved fat,
stirring constantly until browned, about 3 minutes.
Whisk in stock, milk and cream. Stir until incorporated.
2. Remove from heat and transfer gravy to a medium
saucepan. Cook over medium-low heat until thickened,
stirring occasionally, about 10 to 15 minutes. Season
with salt and pepper.
