Ingredients

  • 1/2 c balsamic vinaigrette salad dressing
  • 1/4 tsp seasoned pepper
  • 1/4 c cilantro
  • 1/8 tsp ground cayenne pepper
  • 1/4 tsp ground cumin
  • 2 15-oz cans black beans, rinsed and drained or fresh cooked
  • 2 15-oz cans whole kernel corn, drained or frozen
  • 1/2 c chopped red onion
  • 1/2 c chopped green onion
  • 1/2 c red bell pepper, chopped

Preparation

Step 1

In a small bowl, mix together vinaigrette, seasoned pepper, cilantro, cayenne pepper and cumin. Set Aside.

In a huge bowl, stir together beans, corn, onions, scallions and red pepper. Toss with dressing. Cover and refrigerate overnight. Toss again before serving.

For salsa add several chopped tomatoes. I also add 1-2 cloves chopped garlic and green, yellow, or orange peppers, chopped.

To make homemade vinaigrette:
1 tsp Dijon mustard
1/2 c extra virgin olive oil
2 T + 1 tsp aged balsamic vinegar (sweet)

Whisk together and mix in remaining seasonings from ingredient list.
