  • 1/4 cup butter
  • 1/2 cup cold water
  • 1/4 cup milk
  • 2 whole eggs
  • 2 egg yolks
  • 3/4 cup flour
  • 1 T sugar
  • 1 tsp grated lemon peel
  • 1/4 tsp salt

Preparation

Step 1

To clarify butter; melt in small, heavy saucepan. Skim off and discard the surface foam. Spoon the clear butter on top into a measuring cup, discard milky solids at the bottom of the pan. Makes about 2 T of clarified butter.

Blend all ingredients including butter until smooth.
