    cup (1 stick) butter, softened

    cup sugar

    cup low fat plain yogurt

  • 1/2

    tsp vanilla

  • Frosting:

  • 1/2

    cup butter, softened

  • 4

    strawberries, hulled and cut

  • 2 1/2

    cups powdered sugar

  • 1/4

    cup half and half

  • 1

    tsp vanilla

Directions

Preheat oven to 350. line 18 muffin cups with cupcake liners. In a medium bowl, stir together the flour, baking powder, baking soda, and salt until well mixed. In a large bowl with an electric mixer on medium high speed, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time. With the mixer on low speed, beat in the flour mix alernately with the yogurt, beginning and ending with the flour mixture. Pour the batter evenly in the lined muffin cups. Bake the cupcakes unitl golden on top. Meanwhile, prepare the frosting. In a medium bowl with an electric mixer on high speed, cream the butter until it is pale and fluffy. Add the strawberries. Add powdered sugar at low speed 1/2 cup at a time. Add the cream by spoonfuls. Beating until well blended. Add the cream by the spoon ful, beating until blended. Add the vanilla and beat until incorporated.
