- 1 cup quinoa
- 2 1/2 cups water
- 1/4 cup raisins
- 1/2 cup apricots, chopped
- 1/2 cup pistachios
- 2 tablespoons olive oil
- 1/2 cup pomegranate seeds
- Salt and pepper to taste
