Hummus

Ingredients
- Garnish:
- 1 16 oz can of chickpeas or garbanzo beans
- 1/4 cup liquid from can of chickpeas
- 1/4 cup lemon juice
- 1/4 cup extra virgin olive oil
- 3 tablespoons tahini
- 1/4 teaspoon harissa
- 1 large clove of garlic, peeled
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- Chopped fresh mint
- Warm pita

Preparation
Step 1
1. Turn on food processor with a steel blade and drop in the garlic. Process until garlic is stuck to the sides of the bowl. Scrape down and add chickpeas and cumin. Process to a course purée and scrape down side again.
2. Combine lemon juice, salt and olive oil. Turn the processor on and pour the mixture in. Add tahini and process until smooth, up to 5 minutes.
3. If the mixture seems dry, pour in 1/4 cup of liquid from the chickpeas or water or yogurt.
4. Place in serving bowl, and create a shallow well in the center of the hummus. Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley or mint (optional).
