Ingredients

  • Duck
  • 1 raw Duck
  • 2 ounces soy sauce
  • 1 tablespoon poultry seasoning
  • 1 . Remove neck and gizzards from chest cavity. Rinse inside and out with cold water.
  • 2 . Remove skin flap at the end and cut away any large fat globules from the edges of bird.
  • 3 . Place duck in roasting pan and season with soy sauce and poultry seasoning.
  • Cover with foil. Bake a 350 degrees for 3 hours.

Step 1

Sauce A L'Orange


1 cup brown sugar
1/2 cup granulated sugar
2 cups orange juice
2 cups water
1/4 tsp. ginger
2/3 tsp. cinnamon
1 zest from orange
2/3 cup water
2/3 cup brown sugar
1/4 cup chicken stock
1/8 cup corn starch
1/8 cup water

1. Bring first 6 ingredients to a boil, stirring to insure proper blending. Reduce to simmer.

2. In a separate sauce pan, place 2/3 cup brown sugar, 2/3 cup water and zest together. Simmer until rinds are tender (10 minutes). Then add to first pot. Add stock and simmer 5 minutes.

3. Dissolve cornstarch in 1/8 cup water, add to sauce; let simmer 3 more minutes.
