Ingredients

    tbsp coconut oil

  • 1

    small white onion, diced

  • 1

    red bell pepper, seeded and diced

  • 1/4

    tsp crushed red pepper flakes

  • 1

    tomato, seeded and diced

  • 5

    large eggs

  • 1/2

    tsp salt

  • 1/2

    tsp pepper

  • 8

    cooked ham slices

  • Guacamole:

  • 2

    ripe avocados, pitted and chopped

  • 1

    small white onion, finely chopped

  • 1/2

    tsp minced garlic

  • 1

    tomato, chopped

  • Juice from 1 lime

  • 1/2

    tsp salt

  • 1/2

    tsp pepper

Directions

Heat coconut oil in a large skillet over medium high heat. Cook onion, bell pepper, and crushed red pepper 6 minutes or until onion is tender. Add tomato, and cook 2 minutes longer. Whisk eggs, salt and pepper in a small bowl; pour over vegetables in skillet. Cook eggs until scrambled, about 5 minutes. For each roll up, stack 2 ham slices and place some of the egg mixture in the middle. Roll up and place in skillet. Grill each roll up until ham is browned on all sides. For the guacamole, mix all ingredients together in a medium bowl. Mash avocado is desired or leave some pieces for a chunky texture. Add hot sauce, if desired.
