  • In stock pot bring to boil

  • 1/8 cup white wine vinegar
  • 1 teaspoon salt
  • 3/8 cup sugar
  • IN PAN SAUTE'
  • 1/2 cup red pepper strips
  • 1/2 cup green pepper strips
  • 1/2 cup yellow onion strips
  • 1/4 pineapple (cut in strips)
  • 1 mango (cut up)
  • Add vegetables and fruit to wter. Add 2-3 tablepoons corn starch to thicken.

Step 1

IN PAN SAUTE'
2 tablespoons olive oil
4-8 ounces Mahi Mahi

Cook to medium done (do not overcook).

Preparae a wild rice following directions on box. Place 6 ounces wild rice on plate Put Mahi Mahi on rice and ladle sauce on fish.
