Ingredients

  • 2 2 1/2 Chicken Fryers
  • 4 Tblsp. Curry Powder
  • 2-3 Tblsp. Vinegar
  • 4 Tblsp. Tomato Paste
  • 2 Tblsp. Sugar
  • 1 Tsp. Chili Powder
  • 3 Tblsp. Butter
  • 2 Onions
  • 2 Garlic Cloves, smashed
  • Salt and Pepper to taste

Step 1

In a small bowl, make sauce with curry powder, vinegar, tomato paste, sugar and chili powder and set aside. Slice onions thin and add to large pot with butter, fry til tender. Then add garlic, sauce and chicken pieces. Add salt and pepper to taste. Stir, cover and simmer slowly for 1 hour and 20 minutes, stirring occasionally. Add up to 1 cup of water if it sticks. Skim off fat before serving.
