Ingredients

  • 1 large egg
  • 1 cup regular or reduced fat sour cream
  • 1/2 cup milk
  • 3 T mild olive oil or melted butter
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup all purpose flour
  • 2 tsp granulated sugar
  • Oil for cooking

Step 1

Crack open the egg, letting the white fall into a deep narrow bowl. Put the yolk into a medium size bowl. Add the sour cream, milk, oil or butter, baking powder, baking soda, salt and flour to the yolk without mixing.

Beat the egg white with an electric mixer at high speed until soft peaks form when the beater is lifted. Add the sugar and beat until stiff peaks form.

Transfer the beater to the other bowl and beat the ingredients at low speed until well blended. Using a rubber spatula, fold the beaten white into the flour mixture.

Heat the waffle iron. Grease the iron lightly. Pour in the appropriate amount of batter and spread to the edges. Close and cook until the iron will open easily.

Keep the waffles warm in a 200 degree oven, directly on the oven rack, uncovered to stay crisp.
