Vince's Sweet and Sour Meatballs

Ingredients
- 1 can 20oz pineapple chunks
- 1/3 cup chicken stock
- 3 T vinegar
- 1/2 cup packed brown sugar
- 3 T cornstarch
- 30 frozen (or thawed) meatballs
- 1 colored pepper cut into 1 inch pieces
- 1 tsp paprika powder
- Hot Cooked Rice

Step 1
Drain pineapple, reserving juice. Set pineapple aside. Add stock to juice to equal one cup. Pour into a large skillet. Add 1/3 cup stock, vinegar, soy sauce, brown sugar and cornstarch. Stir until smooth.
Cook over medium until thick, stirring constantly. Add the pineapple, meatballs and pepper.
Simmer uncovered for 20 minutes or until heated through. Serve with rice.
Yield 6 servings.
