Scallops Gratin ala Parmesana

Ingredients
- 12 large scallops on the half shell
- 1 1/2 cups grated Parmigiano cheese
- 1 tablespoon Panko
- 4 tablespoons (1/2 stick) butter
- 1 small glass pisco or whiskey
- olive oil
- salt and freshly ground black pepper

Preparation
Step 1
Lightly rinse and dry the scallops, removing the black vein from the round side of the flesh of the scallop if there is one.
Season with salt & freshly ground black pepper.
Cover each scallop generously with grated parmesan cheese & top with a dollop of butter.
Add a drop of olive oil to each shell and six drops of Pisco or whiskey.
Place in the broiler at high temperature for 3 or 4 minutes until the cheese is golden brown.
Serve with a green salad dressed w hominy corn, tomato, potatoes (blue, red, yellow) and sweet potatoes in a light lemon dressing.
