Preparation

Step 1

Place these into a lightly greased baking dish and set aside.

Now for this ridiculous filling–start out by mixing some softened cream cheese just to get things working…

add in some taco seasoning, parmesan cheese,

Stir it all up and voila! An amazingly cheesy and flavorful filling. I know it doesn’t look like much, but trust the Lauren.

Directions:

Preheat oven to 375 degrees. Lightly grease baking dish with non stick cooking spray and set aside.

Remove stems from mushrooms and wipe caps with damp cloth to remove any dirt. Place into baking dish.

In a small bowl, stir cream cheese to soften. Pour in parmesan cheese, taco seasoning, green onion, 3/4 cup cheddar cheese, salt and pepper. Spoon filling into cleaned mushrooms. Pour enchilada sauce over top. Sprinkle with remaining 1/4 cup cheddar cheese. Bake 20 minutes until browned and bubbly. Serve hot.

I am addicted to shrooms too

What a genius idea! Your mushroom addiction is benefiting us all Lauren

These look amazing… I think I might need to go out to buy stuff and then make these TODAY.

Oh my dear goodness, these sound fantastic!! I love mushrooms a lot too. They’re addicting!

You’re right. I must make these!

can’t wait to try these, as I too am addicted to shrooms. Keep up your awesome cooking!

they look incredible! they would make the perfect midweek dinner!

You make me want to be a mushroom-eatin’ fool! I so wish there were a Costco near me…sigh.

Oh my heck! These look wonderful! Luckily my whole family is addicted to mushrooms as well. I need to get my self to Costco…sampling is never a bad thing…

Seriously. I cannot wait to make this. The boyfriend is moving back home in 2 weeks and I think I’ll surprise him with this. He might just propose once I make this.

I’m so happy I found this recipe! We’re doing a “snack day” at work tomorrow that’s texmex theme for cinco de mayo, so I’m making these. I have everything prepped and in the fridge now. Tomorrow morning i’ll pour on the enchilada sauce, bake, then transfer to a crockpot to transport and keep warm. I’m excited about how good they look like they’ll taste!

My husband’s family was over yesterday so I decided to make these. They were SO good! Everyone loved them. Will definitely make them again. Thanks!

Lauren, I did make them. They all went and everyone asked me to make them again. I was just wishing they were mushrooms!!…

These look awesome! They make me realize I haven’t made enchiladas in eons. I must remedy that, and make these, as well!

Think you could make them with green enchilada sauce? Don’t have red enchilada sauce on hand.

I chopped up the stems and added it to the filling mixture…it was DELICIOUS!!! Thanks for the recipe!
