Loaded Egg Rolls

Defrost fully and warm in a single layer @ 300 for 20 minutes.

Ingredients
- 2 medium Onions, finely diced
- 10 slices Pastrami, finely diced
- Oil, for frying
- 3 large Potatoes, boiled in salted water and mashed
- 50 Egg Roll Wrappers

Preparation
Step 1
In large frying pan, saute onions and pastrami in oil until onions are caramelized. Combine with mashed potatoes.
Lay one egg roll wrapper on a work surface. Brush edges with water. Fill with 1 heaping Tbsp of mashed potato mixture. Fold in 2 sides and roll up in opposite direction. Repeat for remaining egg roll wrapper.
Heat oil in a large pot for frying.
Fry egg rolls in batches until golden brown.
