Ingredients
- 1 LB boneless skinless chicken breasts, cut into 1" pieces
- 1/2 C thawed non-alocholic pina colade mix, divided
- 1 C tangerine or mandarin orange segments
- 1 celery rib, chopped
- 2 TBL crushed pineapple
- 1 Green onion, chopped
- 4 pitted ripe olives, sliced
- 2 TBL plus 2 tsp lemon juice
- 4 tsp amyo
- 2 tsp grated parmesan cheese
- 1-2 garlic cloves, minced
- 1/8 tsp salt
- 1/8 tsp pepper
- 4 C torn romaine or iceberg lettuce

Preparation
Step 1
combine chicken & 1/4 C pina colada mix
in lg skillet coated w/ cooking spray, cook & stir chicken mixture over med heat until chicken is no longer pink
remove from heat
set aside
combine tnagerines, celery, pineapple, onion & olives in lg bow.
in sm. bowl, combine lemon juice, mayo, cheese, garlic, S & P and the remaining pina colada mix
add chicken & lettuce to tangerine mixture
drizzle w/ dressing
toss to coat
serve immediately
