Ingredients

  • 1/4 cup coconut oil (expeller pressed or refined if you are not down with the coconut taste that extra virgin will impart)
  • 1 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup chocolate chips

Preparation

Preheat oven to 350 degrees and line cookie sheet with parchment paper. Set aside.

In the bowl of a stand mixer, cream together the coconut oil and brown sugar. When combined, add the peanut butter and continue to cream until combined. Next, add the almond milk and vanilla.

In a small bowl, mix the flour, baking soda, baking powder, and salt.

Add the dry ingredients to the wet and beat on low speed until just combined.

Fold in the chocolate chips. The dough will remain slightly crumbly.

Roll dough into tablespoon sized balls and place onto prepared baking sheet, leaving about 2 inches between each cookie. Flatten each cookie slightly with the palm of your hand.

Bake for 7-10 minutes, or until cookies are set. Allow to cool on cookie sheet for a few minutes before transferring to cooling rack. Makes 3 dozen cookies.
